Start with food freshness, not just a long avoid list

Histamine rises in foods as they age, ferment, cure, or sit after cooking. This is why someone may tolerate freshly cooked chicken but react to the same meal after several days in the refrigerator. For a two- to four-week trial, prioritize freshly prepared meals and freeze extra portions promptly rather than relying on leftovers.

Common high-histamine or histamine-liberating foods include aged cheeses, cured meats, smoked fish, fermented foods, vinegar-heavy condiments, alcohol, canned fish, bone broth cooked for long periods, and certain produce such as tomatoes, spinach, eggplant, and avocado. Individual tolerance varies significantly. A food list can offer a starting point, but it cannot replace your own symptom patterns.

Instead of eliminating everything at once, simplify meals temporarily. Choose fresh proteins, well-tolerated fruits and vegetables, and uncomplicated starches. Keep a brief record of meals, symptoms, sleep, stress, bowel movements, and cycle timing. The purpose is not perfection. It is to identify repeatable patterns.
