- 1 Tbsp. coconut oil
- 1/2 red onion, sliced into thin rings
- 2 lbs. fresh baby spinach, washed and stemmed
- 1/2 tsp. grated lemon peel
- sea salt
- 1/4 c. crumbled Feta cheese or Raw Goat Cheese (optional)
- Heat large pan with lid over med/high heat
- Add oil and sliced red onion.
- sauté until onion starts to wilt.
- Add spinach and quickly sauté for 2-3 min.
- Add lemon peel, salt and pepper.
- Add crumbled feta and stir to incorporate.
